Old knowledge where the ingredients are selected so wisely, combined with Organic locally sourced vegetables, enriched with cold-extracted Extra Virgin Olive Oil and Grape Vinegar, pure Aegean-Sea salt and Mediterranean spices, is what makes our food so hearty, healthy and delicious!
1. Gaia Pulses
We ‘wake up’ the seeds by soaking them in filtered water overnight.
When seeds are formed, most plants store a food reserve with the seed, such as Starch, Proteins and Oils. This food reserve provides nourishment to the growing embryo. When the seed gets soaked in water, hydrolytic enzymes are activated which break down these stored food resources into metabolically useful chemicals. By this process not only we benefit from the increased nutrients that the seeds produce for germination but we also facilitate the digestion.
We slow cook our food on a low flame to save as many nutrients as possible and add ingredients like herbs which are best eaten fresh, at the end of the cooking process.
Pulses get harvested annually and they are best eaten within a year of their harvest. Since only the experienced eye can tell by their appearance if more than a year has passed, many unreliable suppliers will keep on selling them. As a result, we end up with pulses that never boil and are very hard to digest.

Pulse-eating can cause bloating to the uninitiated so best to add them to your diet in small amounts and give your body a bit of time to get used to them.

2. Gaia Ingredients
Absolutely No artificial ingredients, Preservatives, or GMOs are used in our foods.
Extra Virgin Cold extracted Greek Olive Oil is added at the end of the cooking process to maintain all it’s antioxidant benefits.
Pure ingredients are wisely combined to enhance the optimum intake of nutrients. Our Zesty Yellow Lentil Stew for example, takes its name from the Fresh Lemon Juice that's added at the end of the cooking process to help our body absorb the Iron from the Lentils while we benefit from the Lemon's antioxidants and vitamin C.
In most of our recipes we add Turmeric and Black Pepper which together form a powerful antioxidant, anti-inflammatory, antiseptic, anti-fungal and anti-bacterial weapon.
Dill is added freshly cut at the end of the cooking in our Green Lentil Stew as it provides protection against free radicals and carcinogens, is anti-bacterial, a good source of Calcium, Magnesium and Iron as well as facilitating the digestion of the Lentils.
Most of our old recipes contain Bay Leaf. Some of the most impressive health benefits of Bay Leaves include their ability to detoxify the body, slow the ageing process, speed up wound healing, protect the body from bacterial infections, manage diabetes, improve heart health, reduce inflammation, alleviate respiratory issues, optimize digestion, and prevent certain types of cancer.
Wild handpicked Oregano is one of our favourite ingredients as besides the beautiful flavour it adds to our dishes it is also rich in Vitamin K, Manganese, Iron, Dietary Fibre and Calcium which only a few people know of its antidepressant attributes. The word Oregano is derived from the Greek words oros (mountain) and ganos (joy) symbolising happiness, also making the hillsides on which it grows look beautiful.
We love the distinctive flavour of All Spice even more when realising how nutritious it is. For minerals, all spice offers important substances like Selenium for longevity, Magnesium, Potassium, Manganese, and Iron. It is also a good source of Vitamins A, B-6 and C, as well as some Riboflavin and Niacin. Given such a nutritional profile, it is not surprising then that All Spice is considered to be an excellent antioxidant as well as carminative (flatulence relief), anti-diarrhoeal, digestive stimulant, digestive tonic, antiseptic, anaesthetic, analgesic, anti-fungal, nervous system stimulant, antidepressant, and aphrodisiac.

At Gaia Pulses we make sure we source our food directly from small producers who love and respect nature and their produce is full of the Mother Earth’s Prana. At our kitchen we prepare all our food with love and the best intentions the same way a mother would cook for her children.

At Gaia Pulses, we respect and love humans, the animals, plants and the Earth.
This is also our message to the world. Therefore we offer food of excellent quality
prepared in the most ethical, seasonal and sustainable way possible.
All our dishes start from a vegan basis and for whoever wants some artisanal meat or cheese can be added as a topping. We source our meat and cheese from Downland Pigs which is a Free Range Farm in Essex, locally grown vegetables and the rest of our Ingredients which cannot be found in the UK from small producers in Greece.
We use only biodegradable and fully compostable packaging and glass jars which if you return them you get a discount off your next purchase.
